Personally I don't think I would install it.
I like to keep all conversations on the forum.
But if your chat is active, and your forum as well, then it's a good idea

Since you have a gaming forum a gallery would be great to have.
You can upload screenshots from the different games for example.
But you just have to make sure people actually use it, and you have to submit most images to get it started.

Chat is good as long as it is used. For a gaming forum it is a great idea, because you don't have to wait for responses to questions. Like I thought about chat for my RP forum, since I could actually have RP done in chat and just logged to the forum for others to read. But, I want to wait for more activity.
As for Gallery, it is nice, though I stopped using it after it didn't offer me exactly what I wanted and I also realized that with some scripting I could easily create a gallery on my website and just link it to the forum...with the gallery I would suggest making sure that people follow all the rules you have set up for them, since you don't want things uploaded that don't offer anything to your forum or that are offensive to people.
DON'T allow guests to upload anything.....

Javachats are horrible to use so I prefer to use IRC as a chat option (+WebIRC for newbies).
